Oma's Kartoffelsalat

  1. Boil the potatoes until tender, then peel and slice while still warm.
  2. Bring the vegetable broth to a simmer together with the diced onion.
  3. Pour the hot broth over the sliced potatoes and let them soak up the liquid for about 10 minutes.
  4. Stir in the vinegar and oil, then season with salt and pepper.
  5. Serve warm or at room temperature.
