Oma's Kartoffelsalat
ingredients
- 1 kg waxy potatoes
- 1 small onion, finely diced
- 400 ml vegetable broth
- 3 tbsp white wine vinegar
- 2 tbsp neutral oil
- Salt and pepper, to taste
steps
- Boil the potatoes until tender, then peel and slice while still warm.
- Bring the vegetable broth to a simmer together with the diced onion.
- Pour the hot broth over the sliced potatoes and let them soak up the liquid for about 10 minutes.
- Stir in the vinegar and oil, then season with salt and pepper.
- Serve warm or at room temperature.
